Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 teaspoon paprika
  • 1 tablespoon chives or parsley (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a saucepan and cover them with cold water, making sure the water is at least 1 inch above the eggs.

Step 2

Heat the pan over medium-high heat until the water comes to a full rolling boil. Once boiling, turn off the heat, cover the pan, and let the eggs sit in the hot water for 10 minutes.

Step 3

While the eggs are resting, prepare an ice bath by filling a large bowl with ice and cold water.

Step 4

After 10 minutes, transfer the eggs to the ice bath to cool completely, about 5 minutes. This will make peeling them easier.

Step 5

Carefully peel the shells off the eggs and slice each egg in half lengthwise. Gently scoop out the yolks and transfer them to a small mixing bowl.

Step 6

Mash the yolks with a fork until they have a fine, crumbly texture.

Step 7

Add mayonnaise, yellow mustard, white vinegar, salt, and black pepper to the yolks. Mix until smooth and creamy. Taste and adjust seasoning if necessary.

Step 8

Using a small spoon or a piping bag, carefully fill each egg white half with the yolk mixture. Distribute the filling evenly among all the eggs.

Step 9

Sprinkle the filled eggs with paprika for garnish. If desired, top with chopped chives or parsley for an extra touch of freshness and color.

Step 10

Serve immediately or refrigerate for up to 2 hours before serving. Enjoy!
