Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 cup White rice
  • 1.5 cups Chicken broth
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 can (10.5 oz) Cream of chicken soup
  • 0.5 cup Sour cream
  • 1 cup Shredded cheddar cheese
  • 1 cup Frozen peas and carrots
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Pepper
  • 0.5 teaspoon Salt
  • 0.5 cup Panko bread crumbs
  • 2 tablespoons Butter
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray.

Step 2

In a large bowl, mix together the white rice, chicken broth, cream of mushroom soup, cream of chicken soup, and sour cream until well combined.

Step 3

Stir in the garlic powder, onion powder, salt, and pepper. Add the frozen peas and carrots, mixing thoroughly.

Step 4

Pour the rice mixture into the prepared baking dish and spread it out evenly.

Step 5

Season the chicken breasts with an additional sprinkle of salt, pepper, garlic powder, and onion powder on both sides. Place the chicken breasts on top of the rice mixture.

Step 6

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 minutes.

Step 7

Meanwhile, in a small skillet, melt the butter over medium heat and stir in the panko bread crumbs. Toast the bread crumbs, stirring frequently, until they are golden brown. Set aside.

Step 8

After 45 minutes, remove the foil from the baking dish. Sprinkle the shredded cheddar cheese evenly over the top of the casserole, followed by the toasted bread crumbs.

Step 9

Return the dish to the oven (uncovered) and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy the warm, creamy goodness with your family!
