Ingredients

  • 2 cups pitted dates
  • 1 cup water
  • 0.25 cups granulated sugar
  • 1.5 cups rolled oats
  • 1.25 cups all-purpose flour
  • 0.75 cups brown sugar, packed
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 0.75 cups unsalted butter, melted

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper.

Step 2

In a saucepan over medium heat, combine the pitted dates, water, and granulated sugar. Cook, stirring occasionally, until the dates break down and form a thick paste, about 8-10 minutes. Remove from heat and let cool slightly.

Step 3

In a large bowl, mix the rolled oats, all-purpose flour, brown sugar, baking soda, and salt until well combined.

Step 4

Add the melted butter to the dry ingredients and mix until crumbly and evenly moistened.

Step 5

Press half of the crumb mixture into the bottom of the prepared pan to form an even layer.

Step 6

Spread the date filling over the crust evenly using a spatula.

Step 7

Sprinkle the remaining crumb mixture over the top of the date layer, pressing it down gently with your hands or the back of a spoon.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.

Step 9

Remove from the oven and let the date squares cool completely in the pan on a wire rack.

Step 10

Once cooled, cut into squares and serve. Store any leftovers in an airtight container for up to one week.
