Ingredients

  • 2 pounds Chicken (bone-in, skinless, cut into pieces)
  • 1 large Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 2 medium Tomatoes (pureed)
  • 1 cup Plain yogurt
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 1.5 cups Water
  • 0.25 cup Fresh cilantro (chopped, for garnish)

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pan over medium heat.

Step 2

Add cumin seeds and let them sizzle for 30 seconds until aromatic.

Step 3

Add the finely chopped onion and sauté for 5-7 minutes, stirring occasionally, until golden brown.

Step 4

Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.

Mix in the pureed tomatoes, turmeric powder, coriander powder, and red chili powder. Cook the mixture for 5-7 minutes, stirring frequently, until the oil starts to separate from the masala (spice mixture).
