Ingredients

  • 10 medium cucumbers
  • 4 medium onions
  • 2 medium green bell peppers

  • 0.5 cup coarse salt
  • 2.5 cups granulated sugar
  • 2.5 cups white vinegar
  • 1 tablespoon celery seeds
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric powder

Directions

Step 1

Wash and peel the cucumbers, then finely chop them. Finely dice the onions, green bell peppers, and red bell pepper.

Step 2

In a large mixing bowl, combine the chopped cucumbers, onions, and bell peppers. Sprinkle the coarse salt over the vegetables and mix well.

Cover the vegetable mixture and let it sit for 4 hours, allowing the salt to draw out excess water.

After 4 hours, drain the vegetables in a colander and rinse thoroughly to remove excess salt. Squeeze out as much water as possible by pressing the mixture gently with your hands or a clean kitchen towel.

In a large saucepan, combine the granulated sugar, white vinegar, celery seeds, mustard seeds, and turmeric powder. Heat over medium heat, stirring occasionally, until the sugar dissolves completely.

Add the drained vegetable mixture to the saucepan and bring the mixture to a gentle boil. Reduce the heat to low and simmer for 5 minutes, stirring occasionally.

Carefully spoon the hot relish into sterilized jars, leaving about 1/4-inch of headspace. Ensure the edges of the jars are clean before sealing with sterilized lids.

Remove the jars from the water bath and allow them to cool completely. Check that the lids have sealed properly by pressing on the center of each lid. If it pops back, the jar has not sealed and should be refrigerated immediately.

Store the sealed jars in a cool, dark place for up to 1 year. Once opened, refrigerate and consume within 1 month.
