Ingredients

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Baking soda
  • 0.75 cups Orange juice (freshly squeezed is best)
  • 0.25 cups Water
  • 2 tablespoons Vegetable oil
  • 1 large Egg
  • 1 cup Fresh cranberries (coarsely chopped)
  • 0.5 cups Chopped walnuts
  • 1 teaspoons Grated orange zest

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, salt, and baking soda. Whisk together to ensure the dry ingredients are evenly distributed.

Step 3

In a medium-sized bowl, whisk together the orange juice, water, vegetable oil, and egg until well combined.

Step 4

Make a well in the center of the dry ingredients and pour the wet ingredients into the well. Stir gently until just combined. Do not overmix; the batter should be lumpy.

Step 5

Fold in the chopped cranberries, walnuts, and orange zest. Be careful not to overmix as this can make the bread dense.

Step 6

Pour the batter into the prepared loaf pan and spread it out evenly.

Step 7

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted in the center of the bread comes out clean.

Step 8

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer the bread to a wire rack to cool completely before slicing.

Step 9

Serve the cranberry walnut bread on its own, or with a spread of butter or cream cheese for an extra treat. Enjoy!
