Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Baking soda
  • 1.5 cups Fresh cranberries, chopped
  • 1 tablespoon Orange zest
  • 0.5 cup Freshly squeezed orange juice
  • 0.25 cup Water
  • 2 tablespoons Unsalted butter, melted
  • 1 Egg, beaten
  • 0.5 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or non-stick spray.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and baking soda. Whisk until well blended.

Step 3

Add the chopped cranberries and orange zest to the dry ingredients and toss gently to coat the cranberries evenly.

Step 4

In a medium bowl, mix the orange juice, water, melted butter, and beaten egg until combined.

Step 5

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a wooden spoon. Be careful not to overmix. The batter will be thick.

Step 6

If using walnuts, fold them into the batter until evenly distributed.

Step 7

Spoon the batter into the prepared loaf pan, using a spatula to smooth the top into an even layer.

Step 8

Bake in the preheated oven for 55–60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 9

Allow the cranberry bread to cool in the pan for about 10 minutes, then carefully transfer it to a wire rack to cool completely before slicing.

Step 10

Slice and serve with butter or your favorite spread. Enjoy!
