Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 2 15-ounce cans canned diced tomatoes (with juice)
  • 1 15-ounce can canned pinto beans (drained and rinsed)
  • 1 15-ounce can canned kidney beans (drained and rinsed)
  • 1 15-ounce can canned whole kernel corn (with liquid)
  • 4 cups beef broth
  • 1 large russet potato, peeled and diced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large stockpot or Dutch oven over medium heat.

Step 2

Add the ground beef, breaking it into small pieces as it cooks, until browned and cooked through, about 5-7 minutes.

Step 3

Remove any excess grease from the pot, leaving the cooked beef behind.

Step 4

Add the diced onion and minced garlic to the pot and sauté until softened, about 3-4 minutes.

Step 5

Stir in the chili powder, ground cumin, and paprika. Cook for another minute to toast the spices.

Step 6

Add the diced tomatoes (with juice), pinto beans, kidney beans, corn (with liquid), beef broth, and diced potato to the pot.

Step 7

Season with salt and black pepper and stir well to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are tender.

Step 9

Taste and adjust seasoning if needed.

Step 10

Serve hot with crusty bread or cornbread on the side for a complete meal.
