Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 0.5 cup shredded cheddar cheese (for garnish)
  • 0.5 cup sour cream (for serving)
  • 0.25 cup chopped fresh cilantro (for garnish)
  • 1 cornbread (optional, for serving)

Directions

Step 1

Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add the olive oil to the pot.

Step 2

Once the oil is hot, add the diced onion and green bell pepper. Sauté for 5-7 minutes, or until softened and fragrant.

Step 3

Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning.

Step 4

Push the vegetables to one side of the pot and add the ground beef. Cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 8-10 minutes.

Step 5

Drain any excess grease from the pot, if necessary, and stir the cooked vegetables and beef together.

Step 6

Add the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper. Stir well to coat the meat and vegetables in the spices.

Step 7

Pour in the diced tomatoes, tomato sauce, and beef broth, stirring to combine. Bring the mixture to a gentle simmer.

Step 8

Add the drained and rinsed kidney beans and black beans to the pot. Stir them into the chili base.

Step 9

Reduce the heat to low, cover the pot, and let the chili simmer for 40-50 minutes, stirring occasionally to prevent sticking.

Step 10

Taste the chili and adjust the seasoning if needed, adding more salt, pepper, or spices to suit your preference.

Step 11

Ladle the chili into bowls and top with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.

Step 12

Serve with cornbread on the side for a classic cowboy-style meal. Enjoy!
