Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 leaf Bay leaf
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels. Season both sides generously with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat a large skillet or Dutch oven over medium-high heat. Add the olive oil and 1 tablespoon of butter to the pan.

Step 3

Place the chicken thighs skin-side down in the skillet and sear for 4-5 minutes, until the skin is golden and crispy. Flip the chicken and sear the other side for another 3-4 minutes. Remove the chicken from the skillet and set aside.

Step 4

Reduce the heat to medium and add the remaining tablespoon of butter to the skillet. Once melted, add the chopped onion and sauté for about 5 minutes until softened.

Add the minced garlic to the onions and cook for 30 seconds until fragrant.

Return the chicken thighs to the skillet, along with any juices that might have accumulated. Spoon some of the sauce over the chicken.

Reduce the heat to low, cover the skillet, and simmer for 25-30 minutes, or until the chicken is fully cooked and tender. Make sure the internal temperature of the chicken reaches 165°F (74°C).

Remove the bay leaf and adjust seasoning with additional salt and pepper, if necessary.

Serve the chicken hot, garnished with freshly chopped parsley. Pair it with mashed potatoes, rice, or crusty bread to soak up the luscious sauce.
