Ingredients

  • 2 5-ounce cans canned tuna (in water)
  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 stalks celery
  • 0.5 medium onion red onion
  • 2 tablespoons sweet pickle relish
  • 2 large hard-boiled eggs
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package directions until al dente, about 7-8 minutes. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

Step 2

While the pasta is cooling, finely dice the celery and red onion. Peel and chop the hard-boiled eggs into small pieces.

Step 3

In a large mixing bowl, combine the drained tuna, cooked and cooled macaroni, diced celery, red onion, chopped eggs, and sweet pickle relish.

Step 4

Add the mayonnaise, salt, and black pepper to the bowl. Mix well until all ingredients are evenly coated and combined. Taste, and adjust seasoning if necessary.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to chill and allow the flavors to meld together.

Step 6

Before serving, give the salad a quick stir and garnish with freshly chopped parsley, if desired.

Step 7

Serve cold as a standalone dish or alongside crackers, bread, or fresh vegetable sticks.
