Ingredients

  • 3 lb Chuck roast
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 2 tbsp Olive oil
  • 2 Yellow onions, peeled and quartered
  • 4 Carrots, peeled and cut into large chunks
  • 3 Celery stalks, cut into large pieces
  • 4 Russet potatoes, peeled and quartered
  • 2 cups Beef broth
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 Bay leaf

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Season the chuck roast generously on all sides with salt, black pepper, and garlic powder.

Step 3

In a large Dutch oven or heavy oven-safe pot, heat the olive oil over medium-high heat.

Step 4

Sear the chuck roast for 3-4 minutes on each side, until browned. Remove the roast and set aside.

Step 5

Add the quartered onions, carrots, and celery to the pot and sauté for 5 minutes, until slightly softened.

Step 6

Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.

Step 7

Pour in the beef broth and deglaze the pot, scraping up any browned bits from the bottom for added flavor.

Step 8

Add the potatoes, dried thyme, and bay leaf to the pot, then place the seared chuck roast on top of the vegetables.

Step 9

Cover the pot with a tight-fitting lid and transfer it to the oven.

Step 10

Bake for 3.5 to 4 hours, or until the roast is fork-tender and the vegetables are fully cooked.

Step 11

Remove the bay leaf and transfer the roast to a cutting board to rest for 10 minutes before slicing.

Step 12

Serve the chuck roast with the cooked vegetables and pan juices spooned over the top for extra flavor.
