Ingredients

  • 2 cups carrots, finely grated
  • 1 cup potatoes, finely grated
  • 0.5 cups butter, melted
  • 1 cup white sugar
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 1 cup raisins
  • 0.5 cup currants
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Grease a pudding mold or heatproof bowl with butter and set aside.

Step 2

In a large mixing bowl, combine the grated carrots, grated potatoes, and melted butter. Mix well.

Step 3

Add the sugar to the carrot mixture and stir until fully dissolved.

Step 4

In a separate bowl, sift together the flour, baking soda, cinnamon, nutmeg, and cloves.

Step 5

Gradually fold the dry ingredients into the carrot mixture until fully incorporated.

Step 6

Stir in the raisins, currants, and walnuts (if using). Mix until evenly distributed.

Step 7

Pour the batter into the prepared pudding mold, leaving about 1 inch of space at the top for expansion.

Step 8

Cover the mold tightly with foil and secure it with kitchen twine or an elastic band to form a seal.

Step 9

Place the mold in a large pot with a steaming rack. Add enough water to the pot to come halfway up the sides of the mold.

Step 10

Bring the water to a gentle simmer over medium heat. Cover the pot with a lid and steam the pudding for 2.5 hours, checking occasionally to ensure the water level remains sufficient. Add boiling water as needed.

Step 11

Once steamed, carefully remove the pudding mold from the pot and allow it to cool for 10 minutes before unmolding.

Step 12

Serve warm with a drizzle of cream, a dollop of brandy sauce, or a sprinkle of powdered sugar for a festive touch.
