Rinse the chicken wings under cold water and pat them dry with paper towels. Cut them into drumettes and wingettes, if not already done.
Peel and finely mince the garlic. Grate the fresh ginger using a fine grater.
In a large mixing bowl, combine soy sauce, dark soy sauce, brown sugar, honey, minced garlic, grated ginger, sesame oil, and water. Mix well to create the marinade.
Add the chicken wings to the bowl and toss them gently to ensure they are completely coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably 2–4 hours, for the best flavor.
Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top.
Remove the chicken wings from the marinade, allowing the excess marinade to drip off. Arrange the wings in a single layer on the wire rack. Reserve the marinade for later use.
Bake the chicken wings in the preheated oven for 25 minutes. While the wings are baking, pour the reserved marinade into a small saucepan and bring it to a boil. Reduce heat to simmer for 5–7 minutes until the sauce thickens slightly.
After 25 minutes of baking, remove the wings from the oven and brush them generously with the thickened sauce. Flip the wings over, brush the other side, and return them to the oven.
Increase the oven temperature to 400°F (200°C) and bake for an additional 15 minutes until the wings are golden and slightly caramelized.
Once fully cooked, remove the chicken wings from the oven. Garnish with chopped green onions and toasted sesame seeds before serving.
