Ingredients

  • 2 pounds Ground beef
  • 1 large Yellow onion, chopped
  • 3 cloves Garlic cloves, minced
  • 15 ounces Tomato sauce
  • 15 ounces Diced tomatoes with green chilies
  • 15 ounces Kidney beans, drained and rinsed
  • 15 ounces Pinto beans, drained and rinsed
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Sugar
  • 1 tablespoon Olive oil
  • 0 Optional toppings: shredded cheese, sour cream, green onions

Directions

Step 1

Heat a large skillet over medium-high heat. Add olive oil and ground beef. Cook the beef until browned and no longer pink, breaking it up into small crumbles with a wooden spoon. Drain any excess fat and transfer the beef to the crock pot.

Step 2

In the same skillet, sauté the chopped onion until softened, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant. Transfer the onion and garlic to the crock pot.

Step 3

To the crock pot, add the tomato sauce, diced tomatoes with green chilies, kidney beans, pinto beans, and beef broth.

Step 4

Sprinkle in the chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and sugar. Stir everything together to combine.

Step 5

Cover the crock pot with its lid and set to cook on low heat for 8 hours or high heat for 4 hours.

Step 6

Once the chili is cooked, taste and adjust seasonings if necessary. Serve hot with optional toppings like shredded cheese, sour cream, or green onions.
