Ingredients

  • 2 pounds ground beef
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup water

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned and no longer pink. Drain excess grease if necessary.

Step 5

Stir in the chili powder, cumin, paprika, oregano, cayenne pepper (if using), salt, and black pepper. Let the spices toast for about 1 minute.

Step 6

Add the canned diced tomatoes, tomato sauce, kidney beans, black beans, and the cup of water. Stir everything well to combine.

Step 7

Bring the chili to a simmer, reduce heat to low, and cover the pot. Let it simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasonings if needed. Add more chili powder or salt for extra flavor, or water to adjust consistency.

Step 9

Serve warm in bowls, optionally garnished with shredded cheese, sour cream, chopped cilantro, or diced green onions.
