Ingredients

  • 3 cups Cooked shredded chicken
  • 1 cup Green chilies (diced, canned)

  • 2 cups Shredded cheddar or Mexican-blend cheese
  • 10 pieces Corn or flour tortillas
  • 2 cups Red enchilada sauce
  • 1 tablespoon Vegetable oil (for greasing baking dish)
  • 2 tablespoons Cilantro (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with vegetable oil.

Step 2

In a medium saucepan over low heat, combine the shredded chicken, diced green chilies, and cream cheese. Stir until the cream cheese is melted and the mixture is well blended. Remove from heat.
