Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Milk
  • 1 cup Breadcrumbs
  • 0.25 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Vegetable oil (for frying)

Directions

Step 1

Place the chicken breasts on a cutting board and slice them in half horizontally to create four thinner cutlets. Use a meat tenderizer to pound them to an even thickness, about 1/4 inch.

Step 2

Set up a dredging station with three shallow bowls. In the first bowl, place the flour. In the second bowl, whisk together the eggs and milk. In the third bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.

Step 3

Coat each chicken cutlet in the flour, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip back into the bowl. Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure an even coating. Repeat with all the cutlets and place them on a plate.

Step 4

Heat the vegetable oil in a large skillet over medium heat. To test if the oil is hot enough, drop a breadcrumb into the oil—it should sizzle immediately.

Step 5

Carefully place the breaded chicken cutlets into the pan, cooking 2 to 3 at a time to avoid overcrowding. Fry for 3 to 4 minutes on each side or until the cutlets are golden brown and fully cooked (internal temperature of 165°F/74°C).

Step 6

Transfer the cooked cutlets to a plate lined with paper towels to drain any excess oil. Repeat with remaining cutlets.

Step 7

Serve immediately while hot and crispy. These cutlets pair wonderfully with a fresh salad, mashed potatoes, or your favorite dipping sauce.
