  • 3 tbsp Vegetable oil
  • 1 tsp Cumin seeds
  • 2 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Garam masala
  • 1 tsp Salt
  • 1.5 cups Water
  • 2 tbsp Fresh cilantro (chopped, for garnish)
  • 2 whole Green chilies (optional, slit lengthwise)

Directions

Step 1

Heat the vegetable oil in a large, deep pan over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until fragrant.

Step 2

Add the finely chopped onions and sauté until golden brown, stirring frequently to prevent burning, about 8-10 minutes.

Add the minced garlic and grated ginger, and cook for 1-2 minutes until the raw aroma disappears.

Stir in the chopped tomatoes and cook until they break down and form a thick paste, about 5-7 minutes.
