Ingredients

  • 4 pieces chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 0.25 cup white wine (optional)
  • 1 cup mushrooms, sliced
  • 0.5 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 4 cups cooked rice or pasta (for serving)

Directions

Step 1

Season the chicken breasts evenly with salt, black pepper, and garlic powder on both sides.

Step 2

In a large skillet, heat the butter and olive oil over medium heat. Once hot, sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Add the sliced mushrooms and cook for an additional 3 minutes until they release their moisture.

Step 4

Sprinkle the flour over the onions and mushrooms, stirring constantly, to create a roux. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 5

Gradually pour in the chicken broth while whisking to prevent lumps. Let it simmer for 2-3 minutes until the sauce starts to thicken.

Step 6

Stir in the heavy cream and white wine (if using), followed by the dried thyme. Mix well to combine.

Step 7

Return the seared chicken breasts to the skillet, spooning some of the sauce over them. Cover the skillet with a lid and let the chicken simmer on low heat for 15 minutes until fully cooked and tender.

Step 8

Taste the sauce and adjust seasoning with additional salt or pepper as needed.

Step 9

Garnish with chopped fresh parsley and serve hot over cooked rice or pasta.
