Ingredients

  • 6 pieces Bone-in, skinless chicken thighs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 3 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 2 medium Bell peppers (red and green), sliced
  • 4 cloves Garlic cloves, minced
  • 0.5 cup Dry white wine
  • 28 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 2 tablespoons Capers, rinsed
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)
  • 0 Cooked pasta or crusty bread (optional, for serving)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Dredge the chicken in all-purpose flour, shaking off the excess.

Step 3

Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat.

Step 4

Sear the chicken thighs for 4-5 minutes per side, until golden brown. Remove them from the skillet and set aside.

Step 5

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet.

Step 6

Sauté the diced onion and sliced bell peppers for 5 minutes, or until softened.

Step 7

Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

Step 8

Deglaze the skillet with the white wine, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 2 minutes.

Step 9

Stir in the diced tomatoes, tomato paste, chicken broth, dried oregano, and dried basil. Mix well.

Step 10

Return the chicken thighs to the skillet, nestling them into the sauce.

Step 11

Cover the skillet and let the mixture simmer over low heat for 30 minutes, or until the chicken is tender and fully cooked (internal temperature of 165°F).

Step 12

Five minutes before the cooking time is complete, stir in the capers for a burst of flavor.

Step 13

Garnish the dish with freshly chopped parsley before serving, if desired.

Step 14

Serve the Chicken Cacciatore over cooked pasta or with crusty bread to soak up the rich sauce. Enjoy!
