Ingredients

  • 2 large Chicken breasts
  • 1 pound Asparagus
  • 1 can Cream of chicken soup
  • 1 cup Sour cream
  • 0.5 cup Chicken broth
  • 2 cups Cheddar cheese, shredded
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Breadcrumbs
  • 2 tablespoons Butter, melted
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

Season the chicken breasts with salt, black pepper, garlic powder, and onion powder. Heat olive oil in a skillet over medium heat and cook the chicken for 4-5 minutes per side until lightly browned but not fully cooked. Remove from the skillet and set aside to cool slightly, then shred or cube the chicken.

Step 3

Trim the tough ends off the asparagus spears and cut them into 2-inch pieces.

Step 4

In a large mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, 1 cup of shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.

Step 5

Add the cooked chicken and asparagus to the bowl, tossing to coat them evenly in the sauce.

Step 6

Transfer the mixture to the prepared casserole dish, spreading it out evenly.

Step 7

Top the casserole with the remaining 1 cup of shredded cheddar cheese.

Step 8

In a small bowl, mix the breadcrumbs with the melted butter until evenly coated, then sprinkle this mixture over the top of the casserole.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbling and the top is golden brown.

Step 10

Remove from the oven and let the casserole rest for 5 minutes before serving.
