Ingredients

  • 3 lbs Chicken (bone-in, skin-on, whole or parts)
  • 3 medium Carrots
  • 3 Celery stalks
  • 1 large Yellow onion
  • 3 cloves Garlic
  • 8 cups Chicken broth
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Fresh thyme leaves
  • 3 cups All-purpose flour
  • 2 Eggs
  • 0.5 cup Water (for dumplings)
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper (ground)
  • 2 tablespoons Butter

Directions

Step 1

Clean and pat dry the chicken. If using whole chicken, cut it into parts.

Step 2

Peel and chop carrots, dice the celery stalks, and quarter the onion. Keep these aside with peeled garlic cloves.

Step 3

In a large pot or Dutch oven, melt butter over medium heat. Lightly brown the chicken pieces to lock in flavor, about 5 minutes per side. Remove the chicken and set aside.

Step 4

Add the carrots, celery, onion, and garlic to the pot. Sauté for 5 minutes until fragrant and slightly softened.

Step 5

Return the chicken to the pot. Add the chicken broth, parsley, thyme, salt, and black pepper.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low and simmer. Cover and let it cook for about 45 minutes, or until the chicken is tender and cooked through.

Step 7

While the soup simmers, prepare the dumpling dough. In a mixing bowl, combine flour, eggs, water, and 0.5 teaspoons of salt. Mix until a soft dough forms. If it’s too sticky, add more flour 1 tablespoon at a time.

Step 8

On a floured surface, roll out the dough to 1/8-inch thickness. Cut into 2-inch squares or rectangles. Let them rest while the soup finishes cooking.

Step 9

Carefully remove the chicken from the pot. Discard the skin and shred the meat from the bones. Return the shredded chicken to the pot.

Step 10

Bring the soup back to a gentle boil. Add the dumpling squares one at a time, stirring to prevent them from sticking together.

Step 11

Simmer for 10-12 minutes until the dumplings are cooked and tender.

Step 12

Taste the soup, adjust seasoning with additional salt or pepper if needed.

Step 13

Serve warm, garnished with extra parsley if desired. Enjoy this classic comfort dish!
