  • 6 pieces chicken thighs (bone-in, skin-on)

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 piece onion (medium, finely chopped)
  • 4 pieces garlic cloves (minced)
  • 1.5 cups chicken stock
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels. Season both sides with 1 teaspoon of salt, 1/2 teaspoon of black pepper, paprika, and garlic powder.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook for 5-7 minutes until the skin is golden and crispy. Flip and cook for another 5 minutes. Remove the chicken and set aside.

Reduce the heat to medium. In the same skillet, add the butter. Once melted, add the chopped onion and sauté for 3-4 minutes until softened.
