Ingredients

  • 4 large Russet potatoes
  • 6 tablespoons Butter
  • 1 cup Whole milk
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 cups Frozen corn kernels
  • 4 ounces Cream cheese
  • 2 cups Cheddar cheese, shredded
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or non-stick cooking spray.

Step 2

Peel the russet potatoes and cut them into roughly 1-inch chunks. Place them in a large pot and cover with water. Add 1 teaspoon of salt to the pot.

Step 3

Bring the pot to a boil, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes are cooking, place the frozen corn kernels in a microwave-safe bowl and microwave for 2-3 minutes, or until they are heated through. Set aside.

Step 5

Drain the cooked potatoes and return them to the pot. Add the butter, cream cheese, and whole milk to the potatoes. Mash thoroughly until they are smooth and creamy.

Step 6

Season the mashed potatoes with the remaining 0.5 teaspoons of salt and black pepper. Fold in the warmed corn kernels and mix until evenly combined.

Step 7

Spread the mashed potato and corn mixture evenly into the prepared baking dish. Sprinkle the top with the shredded cheddar cheese.

Step 8

Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. If desired, broil for an additional 2-3 minutes to achieve a golden-brown topping.

Step 9

Remove from the oven and let the casserole cool for 5 minutes before serving. Garnish with fresh parsley if desired.
