Ingredients

  • 2 cups elbow macaroni
  • 1.5 cups cheddar cheese
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tablespoon dijon mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon granulated sugar
  • 2 whole celery stalks
  • 0.5 whole red bell pepper
  • 0.5 whole red onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 whole hard-boiled eggs

Directions

Step 1

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse the pasta under cold water to halt cooking. Set aside.

Step 2

While the pasta cooks, dice the cheddar cheese into small cubes (about 1/4-inch pieces) and set aside.

Step 3

Chop the celery, red bell pepper, and red onion into small, evenly-sized pieces. Peel and cube the hard-boiled eggs.

Step 4

In a large mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, white vinegar, and sugar until the dressing is smooth and well-combined.

Step 5

Season the dressing with salt and black pepper. Adjust seasoning to taste if necessary.

Step 6

Add the cooked, cooled macaroni to the bowl with the dressing. Toss gently to coat the pasta evenly.

Step 7

Add the diced cheddar cheese, celery, bell peppers, red onion, and hard-boiled eggs to the macaroni. Gently fold everything together until the salad is well-mixed.

Step 8

Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld. Serve chilled.
