Ingredients

  • 1 head cauliflower
  • 0.5 medium red onion
  • 2 stalks celery
  • 1 cup cherry tomatoes
  • 1 cup cheddar cheese
  • 6 strips bacon
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tablespoon white vinegar
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Remove the leaves and stem from the cauliflower head and chop the florets into bite-size pieces. Rinse thoroughly and pat dry.

Step 2

Dice the red onion and celery into small pieces. Halve the cherry tomatoes. Shred or cube the cheddar cheese.

Step 3

Cook the bacon in a skillet over medium heat until crispy. Place the cooked bacon on a paper towel-lined plate to cool, then crumble into small pieces.

Step 4

In a large serving bowl, combine the cauliflower florets, diced red onion, celery, halved cherry tomatoes, shredded cheddar cheese, and crumbled bacon.

Step 5

In a medium mixing bowl, whisk together the mayonnaise, sour cream, white vinegar, sugar, salt, and black pepper to make the dressing.

Step 6

Pour the dressing over the cauliflower mixture and toss until all ingredients are evenly coated.

Step 7

Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

Step 8

Stir the salad once more before serving. Enjoy chilled as a side dish or light meal!
