Ingredients

  • 6 medium carrots
  • 1 medium onion
  • 2 large garlic cloves
  • 2 tablespoons butter
  • 4 cups vegetable broth
  • 0.5 cups heavy cream
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons ground cumin
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Peel and slice the carrots into thin rounds.

Step 2

Dice the onion and mince the garlic cloves.

Step 3

In a large pot, melt the butter over medium heat.

Step 4

Add the onions to the pot and sauté for 4–5 minutes until soft and translucent.

Step 5

Stir in the minced garlic and cook for another 1–2 minutes, until fragrant.

Step 6

Add the sliced carrots, vegetable broth, salt, black pepper, and ground cumin to the pot. Stir well.

Step 7

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the carrots are tender when pierced with a fork.

Step 8

Remove the pot from the heat and let it cool slightly.

Step 9

Using an immersion blender (or transferring to a traditional blender in batches), puree the soup until smooth and creamy.

Step 10

Return the pureed soup to the pot and stir in the heavy cream. Heat gently over low-medium heat, but do not let it boil.

Step 11

Taste and adjust seasoning as desired. Add more salt or pepper if necessary.

Step 12

Ladle into bowls and garnish with fresh parsley, if desired.

Step 13

Serve warm with crusty bread or crackers for a complete meal.
