Ingredients

  • 12 oz bucatini pasta
  • 6 slices bacon
  • 3 whole garlic cloves
  • 28 oz crushed tomatoes
  • 2 tbsp olive oil
  • 0.5 tsp red chili flakes
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 2 tbsp fresh parsley
  • 0.25 cup grated Parmesan cheese
  • 0.5 cup pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add bucatini pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta; set aside.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add the bacon slices and cook until crispy, about 6-8 minutes. Remove the bacon from the skillet and place on a paper towel-lined plate to cool. Once cooled, chop into bite-sized pieces.

Step 3

Remove excess bacon grease from the skillet, leaving about 1 tablespoon for flavor. Add 2 tablespoons of olive oil to the skillet and heat over medium heat.

Step 4

Finely chop the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to let the garlic burn.

Step 5

Stir in the crushed tomatoes, red chili flakes, salt, and black pepper. Simmer the sauce on medium-low heat for 10 minutes, stirring occasionally.

Step 6

Add the reserved pasta water to the sauce to help loosen it and make it silky. Stir to combine.

Step 7

Toss the cooked bucatini pasta with the tomato sauce until evenly coated. Add the chopped bacon back into the skillet and stir well.

Step 8

Taste and adjust seasoning with additional salt or black pepper, if needed.

Step 9

Sprinkle fresh parsley and grated Parmesan cheese on top before serving.

Step 10

Serve immediately and enjoy!
