Ingredients

  • 4 pieces Roma tomatoes
  • 0.5 cups Parmesan cheese, grated
  • 0.25 cups Bread crumbs (preferably panko)
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Dried oregano
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven's broiler to high and position the oven rack about 6 inches from the heat source.

Step 2

Slice the Roma tomatoes in half lengthwise and place them cut-side up on a baking sheet lined with foil for easy cleanup.

Step 3

In a medium bowl, combine the grated Parmesan cheese, bread crumbs, chopped parsley, olive oil, garlic powder, dried oregano, salt, and black pepper. Mix well until it forms a crumbly, moist topping.

Step 4

Using a spoon, evenly distribute the Parmesan mixture over the cut sides of the tomatoes, pressing it gently to help it adhere.

Step 5

Place the baking sheet under the broiler and cook for 3-5 minutes, or until the topping is golden brown and the tomatoes are slightly softened. Keep a close eye to avoid burning.

Step 6

Remove the tomatoes from the oven and let them cool for 2 minutes before serving.

Step 7

Serve warm as a side dish or appetizer. Enjoy!
