  • 6 eggs

  • 1 cup shredded cheddar cheese
  • 1 cup diced potatoes (or frozen hash browns)
  • 0.5 cup chopped bell peppers
  • 0.25 cup chopped onion
  • 0.5 cup crumbled breakfast sausage or bacon (optional)
  • 2 tablespoons butter or oil
  • 0.5 cup salsa (optional, for serving)
  • 2 teaspoons hot sauce (optional, for serving)

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of butter or oil.

Step 2

Cook the diced potatoes (or hash browns) for 5-7 minutes, stirring occasionally, until golden and crispy. Add the chopped bell peppers and onions, cooking for another 5 minutes until softened. Remove the mixture from the skillet and set aside.

In the same skillet, cook the crumbled breakfast sausage or bacon if using, until browned. Drain any excess grease and set aside.
