  • 2 cups Buttermilk

  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the tin well.

Step 2

In a large mixing bowl, pour the boiling water over the wheat bran and let it sit for 5 minutes, allowing the bran to soften.

Step 3

Add the buttermilk, vegetable oil, eggs, brown sugar, and vanilla extract to the softened bran mixture. Whisk everything together until well combined.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
