Ingredients

  • 1 pound Beef sirloin steak
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 8 ounces Cremini or white mushrooms, sliced
  • 2 cups Beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup Sour cream
  • 2 tablespoons Chopped fresh parsley
  • 12 ounces Wide egg noodles

Directions

Step 1

Begin by slicing the beef sirloin steak into thin strips, about 1/4 inch thick. Season the strips with salt and black pepper, and dust them lightly with all-purpose flour.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear the beef strips in small batches, making sure not to overcrowd the pan. Cook each side for about 1-2 minutes until browned, then remove the beef and set it aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil and butter. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and mushrooms, and cook for another 5-7 minutes until the mushrooms release their moisture and are golden.

Step 4

Pour in the beef broth and add the Worcestershire sauce. Stir to combine, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for 5-7 minutes, allowing it to reduce slightly.

Step 5

Lower the heat to medium and stir in the sour cream until fully incorporated, creating a creamy sauce. Add the seared beef back into the skillet, along with any juices that may have accumulated. Stir everything together and cook for an additional 5 minutes to warm through.

Step 6

While the sauce is simmering, cook the egg noodles in a large pot of salted boiling water according to package instructions. Drain and set aside.

Step 7

Serve the beef stroganoff immediately over a bed of egg noodles, garnished with freshly chopped parsley.
