  • 4 medium potatoes, peeled and cubed
  • 2 celery stalks, sliced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme, chopped
  • 1 cup frozen peas
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the beef cubes with salt and black pepper. Sprinkle with flour and toss to coat evenly.

Set your pressure cooker to sauté mode and heat the olive oil. Working in batches, sear the beef cubes until browned on all sides. Remove and set aside.
