Ingredients

  • 2 pounds beef chuck roast
  • 0.25 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 medium potatoes, peeled and cubed
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes. Pat dry with paper towels.

Step 2

In a large bowl, toss the beef cubes with flour, salt, and black pepper until evenly coated.

Step 3

Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Working in batches, sear the beef on all sides until browned, about 2-3 minutes per side. Remove the beef from the pot and set aside.

Step 4

Add the diced onion, carrots, and celery to the pot. Sauté for 5 minutes until softened and fragrant.

Step 5

Stir in the minced garlic and tomato paste. Cook for another 1-2 minutes, stirring constantly.

Step 6

Deglaze the pot by pouring in 1 cup of beef broth, scraping the bottom to release any browned bits.

Step 7

Return the seared beef to the pot. Add the remaining beef broth, Worcestershire sauce, bay leaf, thyme sprigs, and potatoes. Stir well to combine.

Step 8

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for 1.5 to 2 hours, stirring occasionally, until the beef is fork-tender and the potatoes are soft.

Step 9

About 10 minutes before the stew is finished, stir in the frozen peas and cook until heated through.

Step 10

Remove the bay leaf and thyme sprigs. Taste and adjust seasoning with additional salt and pepper, if needed.

Step 11

Serve the beef stew hot, garnished with chopped fresh parsley if desired. Enjoy your hearty meal!
