Ingredients

  • 0.75 cup granulated sugar
  • 0.25 cup all-purpose flour
  • 0.25 teaspoon salt
  • 3 cups whole milk
  • 3 pieces large egg yolks
  • 2 tablespoons unsalted butter
  • 1.5 teaspoons vanilla extract
  • 4 pieces ripe bananas
  • 45 pieces vanilla wafers
  • 1 cup whipped cream (optional, for topping)

Directions

Step 1

In a medium saucepan, whisk together the granulated sugar, flour, and salt.

Step 2

Gradually add in the milk, whisking constantly to avoid lumps.

Step 3

Place the saucepan over medium heat and cook, stirring frequently, until the mixture thickens and begins to bubble, about 7-10 minutes.

Step 4

Lightly beat the egg yolks in a small bowl. Gradually pour about 1/2 cup of the hot pudding mixture into the egg yolks while whisking constantly to temper them.

Step 5

Pour the tempered egg yolks back into the saucepan and continue cooking for another 2 minutes, whisking constantly to ensure the mixture does not curdle.

Step 6

Remove the saucepan from heat and stir in the butter and vanilla extract until fully incorporated. Let the pudding cool to room temperature, covering the surface with plastic wrap to prevent a skin from forming.

Step 7

Peel and slice the bananas into 1/4-inch thick rounds.

Step 8

In the bottom of an 8x8-inch baking dish (or similar sized container), arrange a single layer of vanilla wafers.

Step 9

Place a layer of banana slices on top of the wafers, followed by a layer of the pudding.

Step 10

Repeat the layers 2 more times, ending with a layer of pudding. You should have 3 layers of wafers, bananas, and pudding in total.

Step 11

Cover the dish with plastic wrap and refrigerate for at least 2 hours or until fully chilled and set.

Step 12

Before serving, add a dollop of whipped cream on top or spread a layer of whipped cream evenly over the pudding, if desired.
