Ingredients

  • 1.75 cups all-purpose flour
  • 0.75 cups cocoa powder
  • 1.5 teaspoons baking soda
  • 0.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1.75 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 3 whole eggs
  • 1 cups ripe bananas, mashed
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 0.5 cups boiling water
  • 2 cups chocolate frosting (optional, store-bought or homemade)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

Step 2

In a medium bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Step 3

In a large bowl, cream together the sugar and softened butter until light and fluffy, using a hand mixer or stand mixer.

Step 4

Add eggs to the butter mixture one at a time, beating well after each addition.

Step 5

Mix in the mashed bananas and vanilla extract until well combined.

Step 6

Gradually add the dry flour mixture to the wet ingredients in three parts, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined.

Step 7

Slowly pour in the boiling water and stir gently until the batter is smooth. The batter will be thin, but this is normal.

Step 8

Divide the batter evenly between the prepared cake pans.

Step 9

Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Step 11

Once the cakes are fully cooled, spread your chocolate frosting between the layers, over the top, and around the sides as desired.

Step 12

Slice, serve, and enjoy your Mom's Banana Devil's Food Cake!
