  • 2.5 cups Whole milk
  • 3 large Egg yolks

  • 1 teaspoon Vanilla extract
  • 2 pieces Ripe bananas
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract (for whipped cream)

Directions

Step 1

Prepare or bake a pre-made pie crust and allow it to cool completely if not already done.

Step 2

In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.

Gradually whisk in the milk, making sure there are no lumps. Cook the mixture over medium heat, stirring constantly, until it begins to thicken and bubble (about 5-7 minutes).

In a separate bowl, whisk together the egg yolks. Slowly add about 1/4 cup of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.

Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Continue cooking over medium-low heat, stirring constantly, until the custard is thickened (about 2-3 minutes).
