Ingredients

  • 1 pound Ground beef
  • 6 slices Bacon
  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 28 ounces Canned pork and beans
  • 15 ounces Canned kidney beans, drained and rinsed
  • 15 ounces Canned butter beans, drained and rinsed
  • 1 cup Ketchup
  • 0.75 cup Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet over medium-high heat, cook the bacon until crispy. Remove the bacon from the skillet, place it on a paper towel-lined plate, and crumble it once cool. Reserve about 1 tablespoon of the bacon grease in the skillet.

Step 3

Add the ground beef to the skillet and cook until browned and fully cooked, breaking it into smaller pieces as it cooks. Drain any excess grease and set aside.

Step 4

In the same skillet, sauté the diced onion in the reserved bacon grease over medium heat until softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

In a large mixing bowl, combine the cooked ground beef, crumbled bacon, sautéed onion and garlic, pork and beans, kidney beans, and butter beans.

Step 6

In a separate bowl, whisk together the ketchup, brown sugar, apple cider vinegar, yellow mustard, Worcestershire sauce, salt, black pepper, and smoked paprika. Pour this sauce mixture over the beans and meat mixture, stirring well to coat everything evenly.

Step 7

Transfer the mixture to a 9x13-inch baking dish, spreading it out evenly.

Step 8

Bake uncovered in the preheated oven for 1 hour and 15 minutes, or until bubbling and slightly thickened.

Step 9

Remove from the oven and let it cool for a few minutes before serving. Enjoy these delicious cowboy beans as a main dish or a hearty side!
