Ingredients

  • 4 cups canned navy beans (drained and rinsed)
  • 8 slices thick-cut bacon (diced)
  • 1 medium yellow onion (chopped)
  • 1 cup ketchup
  • 0.3333 cup light brown sugar (packed)
  • 2 tablespoons molasses
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.3333 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

In the same skillet, add the chopped onion and sauté for 5-7 minutes, or until softened and lightly golden.

Step 4

In a large mixing bowl, combine the ketchup, brown sugar, molasses, Dijon mustard, apple cider vinegar, smoked paprika, salt, black pepper, and water. Whisk until evenly combined.

Step 5

In a 9x13-inch baking dish, add the drained navy beans, cooked bacon, sautéed onions, and the sauce mixture. Stir everything together until well coated.

Step 6

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 60 minutes.

Step 7

After 60 minutes, remove the foil and stir the beans. Continue baking uncovered for an additional 30 minutes, or until the sauce has thickened.

Step 8

Remove from the oven and let the baked beans rest for 10 minutes before serving. Enjoy!
