Ingredients

  • 2 pounds Ground beef
  • 0.5 pounds Ground pork
  • 12 slices Bacon
  • 1 cup Breadcrumbs
  • 2 Eggs
  • 0.5 cup Milk
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup Ketchup
  • 1 Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Brown sugar
  • 1 tablespoon Spicy brown mustard (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, milk, Worcestershire sauce, yellow onion, garlic, salt, black pepper, and paprika. Mix thoroughly with your hands until all ingredients are evenly incorporated, being careful not to overmix.

Step 3

Transfer the meat mixture to the prepared loaf pan or shape it into a loaf form if using a baking sheet.

Step 4

Carefully lay the bacon slices across the top of the meatloaf, tucking the ends underneath the loaf for a neat appearance. Overlap slightly if necessary to ensure full coverage.

Step 5

In a small bowl, whisk together the ketchup, brown sugar, and spicy brown mustard (if using) to create a glaze. Brush half of the glaze generously over the top of the bacon-wrapped meatloaf.

Step 6

Place the meatloaf in the preheated oven and bake for 45 minutes. Remove it from the oven and brush the remaining glaze over the top.

Step 7

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C) and the bacon is crisp.

Step 8

Allow the meatloaf to rest for 10 minutes before slicing and serving. Pair with your favorite sides, like mashed potatoes and green beans.
