Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, melted
  • 0.75 cups granulated sugar
  • 0.25 cups brown sugar, packed
  • 1 piece large egg
  • 1 cups applesauce (unsweetened)
  • 1 teaspoons vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or grease it lightly with non-stick spray.

Step 2

In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and well combined.

Step 4

Add the egg to the wet ingredients and whisk until fully incorporated. Then stir in the applesauce and vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, folding the mixture gently with a spatula until no streaks of flour remain. Be careful not to overmix, as this can result in dense muffins.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs attached.

Step 8

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These muffins can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
