Ingredients

  • 1 cup (softened) Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cup (packed) Brown sugar
  • 1.5 teaspoons Almond extract
  • 1 teaspoon Vanilla extract
  • 2.25 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.75 cup Sliced almonds
  • 0.3 cup (for dusting) Powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy, approximately 2-3 minutes.

Step 3

Add the almond extract and vanilla extract to the butter mixture and mix until combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring until a smooth dough forms. Be careful not to overmix.

Step 6

Fold in the sliced almonds until evenly distributed throughout the dough.

Step 7

Using a tablespoon or small cookie scoop, portion out the dough and roll into small balls. Place them about 2 inches apart on the prepared baking sheets.

Step 8

Gently press down each dough ball with the back of a fork to slightly flatten them.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Avoid overbaking to keep the cookies tender.

Step 10

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 11

Once completely cooled, lightly dust the tops of the cookies with powdered sugar for a delicate finishing touch.

Step 12

Store the cookies in an airtight container at room temperature for up to 5 days and enjoy!
