Ingredients

  • 6 cups Whole wheat flour
  • 2.5 cups Warm water (110°F)
  • 0.25 cup Honey
  • 1 tablespoon Active dry yeast
  • 2 teaspoons Salt
  • 0.25 cup Olive oil
  • 0.5 cup Additional whole wheat flour (for kneading)

Directions

Step 1

In a small bowl, mix warm water, honey, and active dry yeast. Let it sit for 5-10 minutes until the yeast is foamy and activated.

Step 2

In a large mixing bowl, combine 3 cups of whole wheat flour and salt. Mix in the olive oil and the yeast mixture until a shaggy dough forms.

Step 3

Gradually add the remaining 3 cups of whole wheat flour, one cup at a time, mixing well after each addition. Once the dough becomes too thick to stir, transfer it to a lightly floured surface.

Step 4

Knead the dough for 8-10 minutes, adding small amounts of additional whole wheat flour as needed, until the dough is smooth and elastic but not sticky.

Step 5

Place the dough in a lightly oiled bowl, turning it to coat all sides. Cover the bowl with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free area for about 1 hour, or until it doubles in size.

Step 6

Punch down the dough and divide it into two equal portions. Shape each portion into a loaf and place them into two greased 9x5-inch loaf pans.

Step 7

Cover the loaf pans with a towel and let the dough rise again for 30-40 minutes, or until the dough rises about 1 inch above the edge of the pans.

Step 8

Preheat your oven to 375°F (190°C). Bake the loaves in the preheated oven for 30 minutes, or until the bread sounds hollow when tapped on the bottom and the tops are golden brown.

Step 9

Remove the loaves from the pans and let them cool completely on a wire rack before slicing.
