Ingredients

  • 2 large Potatoes (russet or Yukon gold)
  • 1.5 cups All-purpose flour
  • 1 large Egg yolk
  • 1 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 0.25 cup Crumbled Gorgonzola cheese
  • 0.25 teaspoon Freshly ground black pepper
  • 2 tablespoons Fresh basil leaves (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pierce the potatoes with a fork and bake for 50-60 minutes, or until soft. Let them cool slightly.

Step 3

Peel the potatoes and mash them until smooth. Transfer the mashed potatoes to a clean, floured surface.

Step 4

Add the flour, egg yolk, and 1 teaspoon of salt to the mashed potatoes. Gently combine the ingredients to form a soft dough, being careful not to overwork it.

Step 5

Divide the dough into 4 pieces. Roll each piece into a long rope (about ¾-inch thick) and cut into 1-inch pieces to form the gnocchi.

Step 6

Bring a large pot of salted water to boil. Cook the gnocchi in batches for 2-3 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.

Step 7

In a large saucepan over medium heat, melt the butter. Stir in the heavy cream and bring to a gentle simmer.

Step 8

Reduce the heat to low and gradually add the shredded mozzarella, Parmesan, and Gorgonzola, stirring constantly until the cheeses are fully melted and the sauce is smooth.

Step 9

Season the cheese sauce with black pepper and adjust salt to taste, if needed.

Step 10

Add the cooked gnocchi to the saucepan and gently stir to coat evenly in the molten cheese sauce.

Step 11

Serve immediately, garnished with fresh basil leaves, if desired.
