Ingredients

  • 2 pieces English cucumber (or Japanese cucumbers)
  • 0.5 teaspoon Sea salt
  • 3 tablespoons Rice vinegar
  • 1 tablespoon Low-sodium soy sauce
  • 1 teaspoon Sugar
  • 0.5 teaspoon Sesame oil
  • 1 teaspoon Toasted sesame seeds
  • 1 teaspoon Grated ginger
  • 1 tablespoon Optional garnish: thinly sliced scallions

Directions

Step 1

Wash the cucumbers thoroughly, and remove any stems or blemishes. Thinly slice them into rounds, about 1/8-inch thick, using a sharp knife or a mandoline slicer for uniformity.

Step 2

Place the sliced cucumbers in a mixing bowl, sprinkle them with sea salt, and gently toss to coat evenly. Let sit for 10 minutes to draw out excess moisture.

Step 3

Transfer the salted cucumbers to a colander. Rinse them thoroughly under cold water to remove excess salt, and squeeze gently to remove any remaining water. Set aside.

Step 4

In a small mixing bowl, combine the rice vinegar, low-sodium soy sauce, sugar, sesame oil, and grated ginger. Whisk until the sugar is fully dissolved and the mixture is well blended.

Step 5

In a clean bowl, add the drained cucumbers and pour the dressing over them. Toss gently to ensure the cucumbers are evenly coated with the dressing.

Step 6

Sprinkle toasted sesame seeds over the salad and toss lightly once more. If desired, garnish with thinly sliced scallions for added flavor and color.

Step 7

Serve immediately for a crisp texture, or let the salad chill in the refrigerator for 15–20 minutes to allow the flavors to meld. Enjoy!
