Ingredients

  • 8 oz cream cheese
  • 0.5 cup mayonnaise
  • 12 oz corned beef
  • 1 packet unflavored gelatin
  • 0.25 cup cold water
  • 0.25 cup hot water
  • 1 tbsp horseradish
  • 0.5 tsp onion powder
  • 0.5 tsp garlic powder
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 package assorted crackers or bread

Directions

Step 1

Bring the cream cheese to room temperature to make it easier to mix.

Step 2

Finely chop the corned beef into small pieces and set aside.

Step 3

In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 2 minutes.

Step 4

Pour the hot water over the bloomed gelatin and stir until completely dissolved. Let it cool slightly.

Step 5

In a large mixing bowl, beat the cream cheese until smooth. Add the mayonnaise, horseradish, onion powder, garlic powder, parsley, lemon juice, salt, and black pepper, and mix well.

Step 6

Fold the chopped corned beef into the mixture, ensuring even distribution.

Step 7

Slowly stir in the dissolved gelatin mixture until fully incorporated.

Step 8

Lightly grease a decorative gelatin mold or any serving dish of your choice with non-stick spray.

Step 9

Pour the corned beef mixture into the prepared mold, smoothing the top with a spatula.

Step 10

Cover with plastic wrap and refrigerate for at least 4 hours, or until fully set.

Step 11

To unmold, run a thin, warm knife around the edges of the mold to loosen the spread. Gently invert onto a serving platter.

Step 12

Serve chilled with an assortment of crackers or slices of bread.
