Ingredients

  • 500 grams Potatoes
  • 150 grams Feta cheese
  • 4 stalks Scallions (Green onions)
  • 2 tablespoons Fresh parsley
  • 3 tablespoons Sunflower oil (or olive oil)
  • 1 tablespoon White vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper

Directions

Step 1

Wash the potatoes thoroughly and place them in a large saucepan. Cover with water and add a pinch of salt. Bring to a boil over medium heat and cook for 15-20 minutes, or until the potatoes are fork-tender.

While the potatoes are cooking, finely chop the scallions and parsley. Set them aside.
