Ingredients

  • 170 grams unsalted butter
  • 150 grams dark brown sugar
  • 120 milliliters molasses
  • 1 whole large egg
  • 2 teaspoons vanilla extract
  • 400 grams all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoons ground cloves
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons salt

Directions

Step 1

In a large mixing bowl, cream together the butter and dark brown sugar until light and fluffy, about 2-3 minutes.

Step 2

Add the molasses, egg, and vanilla extract to the butter mixture, and beat until well combined.

Step 3

In a separate bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, ground nutmeg, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix.

Step 5

Divide the dough into two portions, wrap each in plastic wrap, and refrigerate for at least 1 hour or until firm.

Step 6

Preheat your oven to 180°C (350°F) and line baking sheets with parchment paper.

Step 7

On a lightly floured surface, roll out one portion of the dough to about 1/4-inch thickness. Keep the other portion chilled until ready to use.

Step 8

Use cookie cutters to cut out gingerbread men or your desired shapes, and transfer them to the prepared baking sheets, spacing them 1 inch apart.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are firm and the cookies are slightly puffed.

Step 10

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Decorate as desired with royal icing, candies, or sprinkles. Serve and enjoy!
