Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Cornstarch
  • 2 teaspoons Salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Oregano
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Olive oil
  • 4 cups Vegetable oil
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Wash and peel the Russet potatoes. Cut them into even sticks about 1/4 inch thick.

Step 2

Rinse the cut potatoes in cold water to remove excess starch. Then, soak them in a bowl of ice water for 15 minutes to make them extra crispy.

Step 3

In the meantime, combine the cornstarch, salt, garlic powder, paprika, ground cumin, oregano, and black pepper in a small bowl. Set aside.

Step 4

Drain the potatoes and pat them dry thoroughly with paper towels.

Heat the vegetable oil in a large, deep skillet or heavy-bottomed pot over medium-high heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature for best results.
